Our Long Rising Process Breaks Down the Sugars
The natural chemical reactions that occur in our dough allow the yeast to have more time to transform the complex sugars into simple sugars, making them easier to digest and metabolize.
High Protein Content – More Nutrients, Less Heaviness
We use flour with a high protein content, which enables the formation of a “gluten sheath” (the external-most layer of the dough) that helps trap the gasses in the baking process that would otherwise be consumed by the yeast. This process gives our dough an extremely light and rich texture with large air pockets. In this long rising process, the yeast dies off, leaving behind a wholesome dough. This also eliminates the sense of bloating you might normally feel after eating a traditionally quick-baked pizza.
